Cof­fee & White Cho­co­late Bis­cuits

MAKES 30 PREP 15 min­utes + cool­ing COOK 15 min­utes NU­TRI­TION 987kJ; 7g fat (2g sat); 2g pro­tein;

14g car­bo­hy­drate; 1g fi­bre a serve COST 80� each

3 tea­spoons instant cof­fee gran­ules 3 tea­spoons hot wa­ter

180g but­ter, at room tem­per­a­ture

½ cup firmly packed brown sugar

½ cup sweet­ened con­densed milk

1¾ cups self-raising flour

100g white cook­ing cho­co­late, finely chopped,

plus 80g ex­tra, melted


Pre­heat oven to 180ºC/160ºC fan-forced. Grease and line 2 oven trays with bak­ing pa­per. Dis­solve cof­fee in the hot wa­ter. Us­ing an elec­tric mixer, beat but­ter and sugar in a large bowl un­til pale and creamy. Beat in cof­fee mix­ture and con­densed milk. Sift flour over the but­ter mix­ture. Add chopped white cho­co­late; mix well. 2

Roll level ta­ble­spoons of mix­ture into balls. Place on pre­pared trays about 5cm apart. Flat­ten tops slightly. Bake for 12 min­utes or un­til bis­cuits are lightly browned. Cool com­pletely on trays (bis­cuits will firm). Driz­zle the ex­tra melted white cho­co­late over bis­cuits. Al­low to set.
