Ap­ple & Cin­na­mon Muesli Bars

MAKES 12 PREP 10 min­utes + cool­ing COOK 30 min­utes COST $1.10 each

125g but­ter, chopped + 1/2 cup honey + 1 cup tra­di­tional rolled oats + 1 cup chopped pecans + 1 cup chopped dried ap­ple

+ 1 tea­spoon ground cin­na­mon + 1/2 cup self-raising flour + 1/2 cup caster sugar

Pre­heat oven to 160ºC/140ºC fan-forced. Grease and line a 30cm x 20cm (base mea­sure­ment) slice pan with bak­ing pa­per, ex­tend­ing the pa­per at op­po­site sides for han­dles.

Place the but­ter and honey in a large saucepan; cook and stir over low heat for 3 min­utes or un­til melted and com­bined. Place the oats, pecans, ap­ple, cin­na­mon, flour and sugar in a food pro­ces­sor; pulse un­til chopped. Stir through but­ter mix­ture. Spoon into pre­pared pan, press­ing down firmly; level sur­face. Us­ing a large knife, mark top of muesli bar into por­tion sizes (this will make cut­ting eas­ier). Bake for 25 min­utes or un­til golden brown.

Cool com­pletely in pan. Cut, us­ing scor­ing as a guide, into pieces to serve.
