Apple & Cinnamon Muesli Bars
MAKES 12 PREP 10 minutes + cooling COOK 30 minutes COST $1.10 each
125g butter, chopped + 1/2 cup honey + 1 cup traditional rolled oats + 1 cup chopped pecans + 1 cup chopped dried apple
+ 1 teaspoon ground cinnamon + 1/2 cup self-raising flour + 1/2 cup caster sugar
Preheat oven to 160ºC/140ºC fan-forced. Grease and line a 30cm x 20cm (base measurement) slice pan with baking paper, extending the paper at opposite sides for handles.
Place the butter and honey in a large saucepan; cook and stir over low heat for 3 minutes or until melted and combined. Place the oats, pecans, apple, cinnamon, flour and sugar in a food processor; pulse until chopped. Stir through butter mixture. Spoon into prepared pan, pressing down firmly; level surface. Using a large knife, mark top of muesli bar into portion sizes (this will make cutting easier). Bake for 25 minutes or until golden brown.
Cool completely in pan. Cut, using scoring as a guide, into pieces to serve.
