Tur­key & Cu­cum­ber Stacks

SERVES 4 (Makes 8) PREP 10 min­utes COST $2 a serve

1 tele­graph cu­cum­ber + 1/3 cup re­duced-fat spread­able cream cheese + 2 ta­ble­spoons lemon juice + 2 ta­ble­spoons chopped dill + 8 slices tur­key

Cut cu­cum­ber into 3 equal por­tions. Cut each por­tion length­wise into 1cm-thick slices. Process cream cheese, juice and dill un­til com­bined. Spread 8 of the cu­cum­ber slices with cream cheese mix­ture. Top with tur­key slices and re­main­ing cu­cum­ber. Se­cure with tooth­picks to serve.
