Cof­fee & Raisin Sun­daes

SERVES 2 PREP 5 min­utes + 15 min­utes to soak + 15 min­utes to freeze

½ cup raisins

1 ta­ble­spoon cof­fee-flavoured liqueur

250g soy vanilla ice-cream, slightly soft­ened

2 dairy-free waf­fle bas­kets

½ cup drained canned sliced peaches

Com­bine raisins and liqueur in a bowl; stand for 15 min­utes to soak.

Place ice-cream in a bowl. Add half of the raisin mix­ture; stir to com­bine. Freeze for 15 min­utes or un­til firm.

Place scoops of ice-cream into each waf­fle bas­ket. Serve topped with peach slices and re­main­ing raisin mix­ture.
