Coffee & Raisin Sundaes
SERVES 2 PREP 5 minutes + 15 minutes to soak + 15 minutes to freeze

½ cup raisins
1 tablespoon coffee-flavoured liqueur
250g soy vanilla ice-cream, slightly softened
2 dairy-free waffle baskets
½ cup drained canned sliced peaches
Combine raisins and liqueur in a bowl; stand for 15 minutes to soak.
Place ice-cream in a bowl. Add half of the raisin mixture; stir to combine. Freeze for 15 minutes or until firm.
Place scoops of ice-cream into each waffle basket. Serve topped with peach slices and remaining raisin mixture.
