Spe­cial Fried Rice

2 tea­spoons veg­etable or peanut oil,

plus 1 ta­ble­spoon ex­tra

3 eggs, lightly whisked

2 cloves gar­lic, crushed

350g tur­key breast, sliced

3 ba­con rash­ers, rind re­moved, chopped 1 car­rot, finely chopped

50g snow peas, thinly sliced

4 green onions, sliced, plus ex­tra,

to serve

¼ cup sweet chilli sauce, plus ex­tra,

to serve

2 ta­ble­spoons soy sauce, plus ex­tra,

to serve

1 cup cold cooked long-grain rice

1 cup shelled peas, blanched

½ cup frozen corn ker­nels, thawed Co­rian­der sprigs, to serve

Heat a wok or large fry­ing pan over high heat. Add oil; swirl to coat sur­face. Add egg; tilt to cover base. Cook for 1 minute or un­til set un­derneath. Turn; cook for a fur­ther minute. Re­move from wok; roll up omelette and slice. 2

Add ex­tra oil to wok. Stir-fry gar­lic for 1 minute or un­til fra­grant. Add tur­key and ba­con; stir-fry for 3 min­utes or un­til browned and tur­key is cooked. Add car­rot, snow peas and onion; stir-fry for 2 min­utes or un­til car­rot is ten­der. 3

Add the sauces, rice, peas and corn; stir-fry for 1 minute or un­til heated. Serve topped with omelette, ex­tra onion, co­rian­der and ex­tra sauces.
