DIY IDEA Add 400g chat (baby) boiled, halved pota­toes

SERVES 4 PREP 15 min­utes

NU­TRI­TION 2152kJ; 52g fat (8g sat); 18g pro­tein; 14g car­bo­hy­drate; 2g fi­bre a serve COST $3.50 a serve

2 drained an­chovies, thinly sliced

1/3 cup re­duced-fat may­on­naise 1 ta­ble­spoon baby ca­pers, rinsed, plus 2 tea­spoons ex­tra

185g can tuna in oil, drained, flaked

1 ta­ble­spoon lemon juice 400g deli-bought sliced tur­key 100g baby rocket leaves Crusty bread, to serve (op­tional)

1 Process half the an­chovies, the may­on­naise, ca­pers, tuna and juice in a food pro­ces­sor un­til al­most smooth.

2 Place tur­key and baby rocket on a large serv­ing plat­ter. Top with the tuna and an­chovy mix­ture. Top with ex­tra ca­pers and re­main­ing an­chovies. Serve with crusty bread (if us­ing).
