Let’s Ask Amanda How; Reader Recipe Stuffed Tomatoes
This month, editor Amanda Kelly-Lennon gives some egg-cellent tips on eggs!
Q I often make recipes that ask for egg whites only, but I don’t like throwing away the yolks. What can I use the yolks for and how do I store them? Annette Gregory, Townsville, Qld Budget-friendly eggs are an amazingly versatile ingredient. Egg whites can be beautifully whipped into a meringue to create a stunning dessert, or used to make a healthy omelette. Egg yolks are the basis for mayonnaise, lemon curd (see p66), hollandaise sauce and custards. Once separated, store yolks in an ice-cube tray and freeze for up to 2 months. Make sure they’re well covered in plastic food wrap to prevent freezer burn, then simply place the tray in the fridge overnight so they thaw completely. As we come into the Christmas season, save egg yolks to use to bind the stuffing for your turkey, in a dipping cocktail sauce to serve with prawns, or to make a delicious brandy sauce to drizzle over your Christmas pudding!
