Q I of­ten make recipes that ask for egg whites only, but I don’t like throw­ing away the yolks. What can I use the yolks for and how do I store them? An­nette Gre­gory, Townsville, Qld Bud­get-friendly eggs are an amaz­ingly ver­sa­tile in­gre­di­ent. Egg whites can be beau­ti­fully whipped into a meringue to cre­ate a stun­ning dessert, or used to make a healthy omelette. Egg yolks are the ba­sis for may­on­naise, lemon curd (see p66), hol­landaise sauce and cus­tards. Once sep­a­rated, store yolks in an ice-cube tray and freeze for up to 2 months. Make sure they’re well cov­ered in plas­tic food wrap to pre­vent freezer burn, then sim­ply place the tray in the fridge overnight so they thaw com­pletely. As we come into the Christ­mas sea­son, save egg yolks to use to bind the stuff­ing for your turkey, in a dip­ping cock­tail sauce to serve with prawns, or to make a de­li­cious brandy sauce to driz­zle over your Christ­mas pud­ding!
