1 cup crushed pineap­ple, drained

+ 1/3 cup loosely packed mint leaves

+ 1 quan­tity Ba­sic Lemon Curd (recipe, p66)

1 Blend pineap­ple and mint un­til al­most smooth.

2 Make Ba­sic Lemon Curd, as recipe di­rects, re­duc­ing lemon juice to 1 ta­ble­spoon and adding the pineap­ple mix­ture in step 1.
