Pineapple & Mint Curd
MAKES 22/3 cups PREP 10 minutes COOK 15 minutes
1 cup crushed pineapple, drained
+ 1/3 cup loosely packed mint leaves
+ 1 quantity Basic Lemon Curd (recipe, p66)
1 Blend pineapple and mint until almost smooth.
2 Make Basic Lemon Curd, as recipe directs, reducing lemon juice to 1 tablespoon and adding the pineapple mixture in step 1.
