Coleslaw Pasta Salad

150g spi­ral pasta + 3 cups shred­ded green cab­bage + 1 red cap­sicum, thinly sliced

+ 1 green cap­sicum, thinly sliced + 1 onion, halved, thinly sliced + 1 car­rot, cut into match­sticks + ½ cup may­on­naise

+ 2 ta­ble­spoons whole­grain mus­tard

+ 2 ta­ble­spoons red wine vine­gar

Cook pasta in a large saucepan of boil­ing salted wa­ter for 10 min­utes or un­til ten­der. Drain; re­fresh un­der cold wa­ter. Place pasta in a large bowl. Add cab­bage, cap­sicum, onion and car­rot to pasta. Whisk the may­on­naise, mus­tard and vine­gar in a bowl. Add may­on­naise mix­ture to pasta mix­ture; toss to com­bine. Serves 6
