+ FISH SAUCE This adds a strong fish-flavoured taste to dishes. It’s quite salty so don’t sea­son with salt with­out tast­ing first.

+ SAM­BAL OELEK A spicy paste made from chill­ies, this is great in mari­nades and sauces. Once opened, store in the fridge for up to 3 weeks.

+ KAF­FIR LIME LEAVES Sold in small pack­ets at most green­gro­cers and Asian su­per­mar­kets, these have an in­tense lime fra­grance and taste. Store in the fridge in re­seal­able food stor­age bags for up to a week. Use in stir-fries, fried rice and cur­ries. + TAMARIND PUREE Avail­able in small jars at most ma­jor su­per­mar­kets and Asian su­per­mar­kets, tamarind puree adds a slightly sour taste to cur­ries and stir-fries. Once opened, store in the fridge for up to 3 weeks.

+ TOFU Made from soy beans, tofu adds a pro­tein hit to meat-free meals.
