High en­ergy in a glass. 45ml Van­tage aus­tralia 30ml pear purée (or 1 whole fresh ripe pear mud­dled in Bos­ton glass) 10ml fresh lemon juice 1tsp fresh honey (or 15ml honey wa­ter: 100ml fresh honey, 500ml boil­ing wa­ter mix well and bot­tle for easy use) 1 fresh or­ange wedge

place all in­gre­di­ents into Bos­ton glass with the honey be­ing the last in­gre­di­ent to be placed on top of the oth­ers. Shake well with cubed ice and dou­ble strain into a tall cock­tail or Collins glass over cubed ice. Gar­nish with pear slice and or­ange zest or twist.
