Sim­ply bet­ter than the rest

RICHARD John­son pro­fesses a love of sim­ple cook­ing.

The head chef at Ram­bla on Swan in South Perth is not a fan of “new-fan­gled” styles of cook­ing such as food mi­cro­bi­ol­ogy.

“You see He­ston Blu­men­thal do some in­ter­est­ing things but for me it’s the ba­sics that I love,” he said.

“Every­one thinks about Asian or Euro­pean styles with their cook­ing but I love French food be­cause there are sim­ple, clean flavours.

“Some of my favourite dishes in­clude the ones with dhu­fish.”

Ram­bla on Swan won the Restau­rant of the Year ti­tle at the Restau­rant and Cater­ing WA Awards for Ex­cel­lence at the Perth Con­ven­tion and Ex­hi­bi­tion Cen­tre on Au­gust 28.

Mr John­son said what made the restau­rant spe­cial and the rea­son why it had been recog­nised for sev­eral awards in just two years of trade was that the staff loved what they did.

“When I started cook­ing 38 years, peo­ple were beaten up, locked in freez­ers and yelled at,” he said.

“These days you know that’s not go­ing to work and we are hav­ing fun here, some­times too much fun. My ba­sic phi­los­o­phy is that I want peo­ple to en­joy com­ing to work.”
