Great cof­fee with a smile

EAST Vic­to­ria Park busi­ness­man Jimmy Met­calfe-Gib­son be­lieves in serv­ing cof­fee with no frills; just great cof­fee with a smile.

The Cam­bridge Univer­sity Mas­ters de­gree grad­u­ate has had some high pro­file jobs in the past, in­clud­ing state man­ager of the world’s big­gest spirit com­pany, but like other busi­ness peo­ple, he just had to try his own ideas.

Mr Met­calfe-Gib­son’s latest idea is Go Cup, a drive-through cof­fee con­cept op­er­at­ing out of Franklins Tav­ern on Albany High­way in East Vic­to­ria Park when the bot­tle shop is closed from 6am un­til 10am.

He said even though there were a lot of cof­fees avail­able in the Vic­to­ria Park area, he was af­ter more than just a brand name.

“At the end of the day it comes down to pas­sion and care,” Mr Met­calfe-Gib­son said.

“In my ‘cof­fee jour­ney’ thus far, I’ve learnt that cre­at­ing a great cup of cof­fee is as much a science as an art.

“It’s less about ‘ the what’ and more about the how; it needs pre­ci­sion.

“I fol­low ex­actly the same process ev­ery time and care enough to con­tin­u­ally ad­just the vari­ables, such as how fine/coarse the grinder is grind­ing due to weather changes, un­til they are per­fect.”
