A mound of fresh, crisp greens, ripe cherry toma­toes and shin­ing cap­sicum are topped by the heroes of the dish.

Slices of grilled sea­soned hal­loumi pro­vide a dash of salt and dif­fer­ent tex­ture – su­perb when paired with the toma­toes and the mustard dress­ing.

The prawns, how­ever, are the true hero of this fresh meal.

Cooked to ab­so­lute per­fec­tion – un­like any prawn I have ever had be­fore – and fin­ished with a crisp coat­ing, they are fan­tas­tic dipped in the mustard dress­ing.
