Ad­ding a twist to Aus­tralia’s favourite pasta, car­bonara is a bit of a thing at the mo­ment. Bris­bane’s new res­tau­rant of the year, Otto, makes it with shreds of ham hock, while Ti­amo in Melbourne serves tortellini tossed in car­bonara sauce. Push­ing the boat out even fur­ther is Mitch Orr’s take at ACME in Syd­ney, where mac­a­roni is tossed with de­li­ciously crusty lumps of sticky pig’s head and dressed with an egg yolk.
