GUNDOG ES­TATE WILD SEMIL­LON, $30 Some­times I think of semil­lon as that squeeze of lemon you’d use to sea­son a dish. As the name sug­gests, this one from the Hunter Valley is a lit­tle wild, with a star­burst of fresh­ness and mouth­wa­ter­ing tang that en­tices every time. So ver­sa­tile, too.
