WHIP UP THE PERFECT BREAK­FAST DISH FOR MUM’S SPE­CIAL DAY

Show your mum the love by serv­ing these light and fluffy pan­cakes to­day.

STEP 1 Place the flour, baking pow­der, sugar, buttermilk, vanilla and egg yolks in a large bowl and whisk un­til smooth.

STEP 2 Place the egg whites in a clean dry medium bowl and whisk with elec­tric hand beat­ers un­til stiff peaks form. Fold the egg whites into the flour mix­ture.

STEP 3 Place a large non-stick fry­ing pan over medium heat and lightly grease with oil. Cook ¼ cup­fuls of the pan­cake mix­ture, in batches, for 3–4 min­utes each side or un­til they are golden brown and cooked through.

STEP 4 Top with the but­ter and maple syrup to serve. Serves 6.
