Trav­el­ling to Perse­po­lis on his way ay to Shi­raz, he dis­cov­ers an an­cient city with a strong food ood cul­ture, which of­fers in­spi­ra­tion as well as a re­minder der of the im­por­tance of pre­sen­ta­tion in Per­sian food. Back in the kitchen, Delia whips up mouth- wa­ter­ing g boat smug­glers’ fish stew to a dessert known as faloudeh.
