+ CREAM CHEESE IC­ING Place 250g cream cheese and 50g un­salted but­ter in an elec­tric mixer and beat for 6- 8 min­utes or un­til pale and creamy. Add 1 cup ( 160g) ic­ing sugar and 1 ta­ble­spoon lemon juice and beat for a fur­ther 6- 8 min­utes or un­til light and fluffy.

+ THIS CLAS­SIC IC­ING is equally good on the ba­sic ba­nana cake and is also bril­liant with car­rot cake.

+ THE UP­SIDE- DOWN cake can be served warm as a dessert cake with ice cream and maple syrup, or at room tem­per­a­ture with dou­ble cream, if de­sired.

+ FOR A TWIST on the ba­sic ba­nana cake, use maple syrup in the mix­ture in­stead of golden syrup.
