+ CREAM CHEESE ICING Place 250g cream cheese and 50g unsalted butter in an electric mixer and beat for 6- 8 minutes or until pale and creamy. Add 1 cup ( 160g) icing sugar and 1 tablespoon lemon juice and beat for a further 6- 8 minutes or until light and fluffy.
+ THIS CLASSIC ICING is equally good on the basic banana cake and is also brilliant with carrot cake.
+ THE UPSIDE- DOWN cake can be served warm as a dessert cake with ice cream and maple syrup, or at room temperature with double cream, if desired.
+ FOR A TWIST on the basic banana cake, use maple syrup in the mixture instead of golden syrup.
