Broad beans have a de­li­cious nutty flavour and are packed with pro­tein. Shell the beans from their pods and peel the grey skin to re­veal a bright ten­der ker­nel. Spring is their sea­son, so take ad­van­tage of their strik­ing glossy colour – they’ll add vi­brant green fresh­ness to sal­ads and pasta. Or, try sautéing them with but­ter and ba­con for a tasty side to fish or grilled meats.
