You’re high up in Tas­ma­nia’s trout coun­try sur­rounded by count­less lakes and streams, hours away from any salt wa­ter and the menu of a restau­rant cater­ing al­most ex­clu­sively to tourists fea­tures poached prawns, blue eye fi llets and curried clams but no Tas­ma­nian trout or salmon.
