+ YOU CAN USE a man­dolin to thinly slice the fen­nel and ap­ple. To cut thin match­sticks from ap­ple, halve and slice thinly on a man­dolin then slice into sticks with a large knife.

+ TO CRE­ATE long strips or rib­bons of car­rot or cu­cum­ber, use a juli­enne peeler. Th­ese look like a con­ven­tional veg­etable peeler, but have lit­tle ‘ teeth’ that help cre­ate strips of veg­eta­bles.

+ YOU CAN MAKE SLAWS ahead of time. Just store cut veg­eta­bles in air­tight con­tain­ers in the fridge, then toss them to­gether with the dress­ing just be­fore serv­ing.
