+ YOU CAN USE a mandolin to thinly slice the fennel and apple. To cut thin matchsticks from apple, halve and slice thinly on a mandolin then slice into sticks with a large knife.
+ TO CREATE long strips or ribbons of carrot or cucumber, use a julienne peeler. These look like a conventional vegetable peeler, but have little ‘ teeth’ that help create strips of vegetables.
+ YOU CAN MAKE SLAWS ahead of time. Just store cut vegetables in airtight containers in the fridge, then toss them together with the dressing just before serving.
