tips + tricks
+ THE TRICK TO light and fluffy pancakes is simple – don’t overmix your batter and, after making the mixture, let it rest for 15 minutes. This will allow the raising agent to start working and will also help to smooth out any lumps.
+ THE BEST WAY to tell if a pancake is ready to flip is when bubbles start to appear on the top. This is a good sign that the underside is golden and crisp around the edges.
+ KEEP PANCAKES WARM by wrapping them, stacked on top of one another, in a tea towel. The steam will keep them moist and warm.
+ TO PREVENT pancakes from sticking to the pan, wipe out the pan and re- grease it with butter between each batch.
