+ THE TRICK TO light and fluffy pan­cakes is sim­ple – don’t over­mix your bat­ter and, af­ter mak­ing the mix­ture, let it rest for 15 min­utes. This will al­low the rais­ing agent to start work­ing and will also help to smooth out any lumps.

+ THE BEST WAY to tell if a pancake is ready to flip is when bub­bles start to ap­pear on the top. This is a good sign that the un­der­side is golden and crisp around the edges.

+ KEEP PAN­CAKES WARM by wrap­ping them, stacked on top of one an­other, in a tea towel. The steam will keep them moist and warm.

+ TO PRE­VENT pan­cakes from stick­ing to the pan, wipe out the pan and re- grease it with but­ter be­tween each batch.
