+ YOU CAN SWAP the sweet potato for reg­u­lar potato in the roast veg­etable pasties, and use your favourite herbs. + SHRED POACHED chicken breast, smoked or bar­be­cued chicken for the tar­ragon pasties. + GRUYÈRE IS a cow’s milk cheese with a sweet nutty flavour – you can use aged ched­dar or Swiss cheese. Ta­leg­gio is a soft Ital­ian cheese with a mild flavour ( you could also use camem­bert). Both are avail­able from some su­per­mar­kets and del­i­catessens. + YOU CAN FREEZE un­cooked pasties, be­tween sheets of non­stick bak­ing paper in air­tight con­tain­ers, for up to 3 months. Thaw in the fridge and bake as the recipe sug­gests.
