+ YOU CAN FIND ready- made kim­chi at Asian su­per­mar­kets and gro­cery stores.

+ THE KIM­CHI pan­cakes make a great brunch or lunch snack. Serve them with poached eggs for a more sub­stan­tial meal.

+ THE PAN­CAKES can be frozen, wrapped in bak­ing paper in an air­tight container, for up to 2 months. + SWAP THE chicken in the fried rice for store- bought bar­be­cued pork ( found at your lo­cal Chi­na­town).

++ LEFT­OVER RICE that’s been in the fridge ( up to one- day- old) be­come lumpy. You’ll need 4 cups of cooked rice for this recipe.
