+ YOU WILL NEED about 2 medium beet­roots to get the grated amount re­quired for the choco­late cake, 2 medium zuc­chi­nis to get the grated amount re­quired for the lemon cake, and 3 medium car­rots to get the grated amount re­quired for the hum­ming­bird cake.

+ THESE CAKES are per­fect for freez­ing. Put slices be­tween sheets of non- stick bak­ing pa­per, wrap in plas­tic wrap and put in the freezer for up to 2 months.

+ TOP THESE LOAVES with a clas­sic cream cheese ic­ing, for some­thing a lit­tle more deca­dent. Sim­ply beat 250g soft­ened cream cheese with

cup ( 55g) sifted ic­ing sugar and 1 tea­spoon vanilla ex­tract for 5 Spread over the cooled cake and slice to serve.
