In the souks of Fez he finds in­spi­ra­tion for his Maha res­tau­rant, learn­ing to make a white bean soup, a r’fissa (a chicken stew served on shred­ded pas­try) and a b’stilla, a pi­geon pie, which he adapts into a dessert with ap­ples and mint.
