Vi­brant and el­e­gant, the pale straw/gold coloured Pirie Sparkling has a vi­brant lemony acid­ity which adds to a full and rich mid-palate, vig­or­ous mousse, and a per­sist­ing fin­ish. It can be served with nat­u­ral oys­ters, or richer fish such as baked ocean trout, while it can also be en­joyed with thinly-sliced ap­ple seg­ments.
