■ Walker Seafoods’ fleet work around the cy­cle of the moon.

■ Each ves­sel is out at sea for two weeks, and un­loaded twice a month.

■ The fish caught are graded and pack­aged within 10 hours of be­ing un­loaded at the dock, sent to cus­tomers with 24 hours.

■ Walker Seafoods send 20ft con­tain­ers of frozen ship­ments at a time and in Septem­ber, 10 con­tain­ers were shipped.

■ The com­pany also pro­vides tuna to the do­mes­tic mar­ket, in­clud­ing Aus­tralia’s Rock­pool Bar and Grill and Tet­suya’s, both in Syd­ney.
