■ Walker Seafoods’ fleet work around the cycle of the moon.
■ Each vessel is out at sea for two weeks, and unloaded twice a month.
■ The fish caught are graded and packaged within 10 hours of being unloaded at the dock, sent to customers with 24 hours.
■ Walker Seafoods send 20ft containers of frozen shipments at a time and in September, 10 containers were shipped.
■ The company also provides tuna to the domestic market, including Australia’s Rockpool Bar and Grill and Tetsuya’s, both in Sydney.
