Fruit ‘pizza’ is a su­per-easy, healthy dessert idea that’s fun to make and eat.

PREP 20 MIN­UTES

½ small round seed­less watermelon (see note)

1 kiwi fruit, peeled, halved, sliced

1 small ba­nana, peeled, sliced

½ cup low-fat gluten-free co­conut yo­ghurt

4 straw­ber­ries, hulled, chopped

½ x 125g pun­net blue­ber­ries

¼ cup fresh mint leaves

1 ta­ble­spoon gluten-free toasted co­conut chips

2 ta­ble­spoons honey

1 Cut a 2cm thick round from the cut end of the watermelon. Re­serve re­main­ing watermelon for an­other use. Cut watermelon round into 8 equal wedges.

2 Ar­range wedges on a serv­ing plat­ter to re­sem­ble a pizza. Top with kiwi, ba­nana, yo­ghurt, straw­ber­ries, blue­ber­ries, mint and co­conut chips. Driz­zle with honey. Serve im­me­di­ately.
