1¾ cups plain flour Pinch of salt 150g chilled but­ter, chopped ¹⁄³ cup finely grated parme­san 1 egg yolk 1 ta­ble­spoon iced wa­ter

1 Place flour, salt, but­ter and parme­san in a food pro­ces­sor. Process un­til mix­ture forms fine crumbs. Add egg yolk and wa­ter. Process un­til mix­ture just comes to­gether. Shape dough into a disc. Cover with plas­tic wrap. Re­frig­er­ate for 30 min­utes or un­til just firm.
