Thank you for such a great mag­a­zine with so many won­der­ful and easy-to-fol­low recipes. I re­cently made the Ar­ti­choke, Chicken and Freekeh ‘Risotto’ (June 2017, p46) but used buck­wheat in­stead of freekeh. It was amaz­ing! My hus­band ab­so­lutely loved it. It’s cer­tainly a recipe I’ll make again. It was easy to fol­low and made within the 45 min­utes you sug­gested. Loretta Mora­bito, via email
