1½ cups sul­tanas 1 cup dried pit­ted dates, chopped ½ cup dried apri­cots, chopped ½ cup cur­rants 2 tea­spoons finely grated or­ange rind ¼ cup or­ange juice ¼ cup brandy 1½ tea­spoons mixed spice 1 cin­na­mon stick 1 star anise ½ cup pure maple syrup

1 Place all in­gre­di­ents in an air­tight con­tainer. Stir to com­bine. Se­cure lid. Store in a cool, dark place for at least 1 week, stir­ring ev­ery 2 days, to al­low flavours to de­velop (see notes).
