Sausage & ap­ple tray bake

serves 4| prep 30 mins | cook­ing 1 hour 1 tbs ex­tra virgin olive oil 1kg good-qual­ity pork sausages 1 large leek, white and pale part only, thinly sliced 1 fen­nel bulb (or 2 baby fen­nel bulbs), thinly sliced 50g but­ter 1 12⁄ tbs plain flour 330ml btl ap­ple cider 125ml ( 12⁄ cup) chicken stock 300g small sweet pota­toes, cut into wedges 2 red ap­ples, sliced thickly into discs 14⁄ cup fresh sage leaves 100g coarsely torn sour­dough bread

1 Pre­heat oven to 180°C/160°C fan forced. Heat half the oil in a large non-stick fry­ing pan over medium-high heat. Cook sausages, in 2 batches, turn­ing, for 5 min­utes or un­til golden. Trans­fer to a shal­low 23 x 30cm bak­ing dish or tray. 2 Re­duce heat to medium. Heat re­main­ing oil in pan. Add leek and fen­nel, and cook, stir­ring, for 5 min­utes or un­til soft. Trans­fer to bak­ing dish. Melt 20g but­ter in pan and cook un­til foam­ing. Add flour and cook, stir­ring, for 1 minute or un­til bub­bling. Re­move from heat. Grad­u­ally stir in cider and stock. Bring to a sim­mer over medium heat. Set aside. 3 Add sweet po­tato and ap­ple to bak­ing dish. Pour over the stock mix­ture. Cover with foil and bake for 30 min­utes or un­til sweet po­tato is ten­der. 4 Mean­while, melt re­main­ing but­ter in a fry­ing pan over medium heat. Add sage leaves for 1 minute or un­til crisp. Use a slot­ted spoon to trans­fer to a plate lined with a pa­per towel to drain. Add bread to pan and cook, stir­ring, for 1 minute or un­til coated. 5 Re­move bake from oven and sprin­kle with bread. Re­turn to the oven for 15 min­utes or un­til top­ping is crisp and golden. Sprin­kle over crispy sage.

Pre­pare to end of Step 3. Cool to room tem­per­a­ture, then se­curely wrap the dish in 2 lay­ers of plas­tic wrap. Freeze.

Pre­pare up to the end of Step 2, then store in an air­tight con­tainer in the fridge. If frozen, place in the fridge to thaw.

Pre­heat oven to 180°C/160°C fan forced. Re­move bake from fridge, un­wrap and set aside while oven heats. Cover loosely with foil and bake for 30 min­utes, then un­cover and con­tinue from Step 4. For step-by-step Cook Modes, see our ipad app
