For the kids, try omit­ting the chilli and re­plac­ing the peas with corn ker­nels. Serve with crispy ba­con and to­mato rel­ish. The frit­ters can be kept in an air­tight con­tainer in the fridge for up to 2 days. Serve left­overs with mixed salad leaves, sliced av­o­cado, cherry toma­toes and a dol­lop of store-bought tzatziki. This is a great base recipe for us­ing up left­overs. Try re­plac­ing the peas with finely chopped broc­coli, cau­li­flower or coarsely grated car­rot. For ex­tra greens, add finely chopped herbs, such as fresh co­rian­der or chopped chives, or sauté some baby spinach leaves and add to the mix.
