For the kids, try omitting the chilli and replacing the peas with corn kernels. Serve with crispy bacon and tomato relish. The fritters can be kept in an airtight container in the fridge for up to 2 days. Serve leftovers with mixed salad leaves, sliced avocado, cherry tomatoes and a dollop of store-bought tzatziki. This is a great base recipe for using up leftovers. Try replacing the peas with finely chopped broccoli, cauliflower or coarsely grated carrot. For extra greens, add finely chopped herbs, such as fresh coriander or chopped chives, or sauté some baby spinach leaves and add to the mix.
