Who doesn’t love waking up to a stack of pancakes and bacon on the weekend? With a salty-sweet twist, I promise this combo will knock your socks off! I use whisked egg whites to aerate the pancakes so they’re really light and fluffy without the need for a raising agent. My secret ingredient is provolone, which gives a great flavour boost and melts into stretchy curd-like pieces. It comes in two types – dolce is mild and sweet, while piccante has a sharper flavour. The pork fat adds a salty richness and mild smoky flavour, which really lifts the end result. (Lard works well, too, or just use butter.) Get good-quality smoked bacon rashers and fry them until nice and crisp, then finish it all off with a drizzle of the sweetened butter.
