Who doesn’t love wak­ing up to a stack of pan­cakes and ba­con on the week­end? With a salty-sweet twist, I prom­ise this combo will knock your socks off! I use whisked egg whites to aer­ate the pan­cakes so they’re re­ally light and fluffy with­out the need for a rais­ing agent. My se­cret in­gre­di­ent is pro­volone, which gives a great flavour boost and melts into stretchy curd-like pieces. It comes in two types – dolce is mild and sweet, while pic­cante has a sharper flavour. The pork fat adds a salty rich­ness and mild smoky flavour, which re­ally lifts the end re­sult. (Lard works well, too, or just use but­ter.) Get good-qual­ity smoked ba­con rash­ers and fry them un­til nice and crisp, then fin­ish it all off with a driz­zle of the sweetened but­ter.
