Healthier cocoa pops
makes 6 cups | prep 10 mins | cooking 10 mins
120g (6 cups) puffed brown rice 60g ( 14 ⁄ cup) solidified coconut oil 2 tbs pure maple syrup 2 tbs organic cacao powder or cocoa powder
1 Preheat the oven to 150°C/130°C fan forced. Line 2 large baking trays with baking paper. 2 Place the rice in a large bowl. Place the oil, maple syrup and cacao or cocoa powder in a microwave-safe bowl. Microwave on Medium for 15 seconds or until the coconut oil is melted. Stir until smooth and combined. Pour over the rice. Use your hands to mix until all the ingredients are well combined. 3 Spread the rice mixture over the prepared trays. Bake for 3 minutes. Stir well. Return to the oven, rotating the trays, and bake for a further 3 minutes. Set aside on the trays to cool completely. Store in an airtight container for up to 1 week.
These cocoa pops get their sweetness from a dash of natural maple syrup.
