SLOW-COOKED PIE WITH SMASHED PEAS & CHAR­GRILLED ZUC­CHINI serves 2| prep & cook­ing 15 mins (+ cook­ing time for pies) 2 Her­bert Adams Slow-cooked Beef with Caramelised Onion & Caber­net Sau­vi­gnon Pies 1 zuc­chini, thinly sliced length­ways 250g frozen peas 1 tbs ex­tra vir­gin olive oil, plus ex­tra, to serve 1 le­mon, rind finely grated, juiced Small fresh mint leaves, to serve 1 Pre­pare pies ac­cord­ing to in­struc­tions on the pack. 2 Heat a char­grill or bar­be­cue over medium heat. Spray zuc­chini with olive oil and cook for 2-3 min­utes each side or un­til charred and ten­der. Trans­fer to a plate and keep warm. 3 Mean­while, cook peas in a saucepan of boil­ing wa­ter for 2 min­utes. Drain. Mash lightly with olive oil and 1 tbs le­mon juice. Sea­son. 4 Ar­range peas and zuc­chini on a plate. Top with le­mon rind and mint leaves. Driz­zle with oil and serve with pies.

SLOW-COOKED PIE WITH AP­PLE, KALE & AL­MOND SALAD

serves 2 | prep & cook­ing 15 mins (+ cook­ing time for pies) 2 Her­bert Adams Slow-cooked Beef with Shi­raz & Cracked Pep­per Pies 35g but­ter, chopped 1 large red ap­ple, sliced into wedges 1 tbs maple syrup 50g baby French kale leaves 20g sliced al­monds, lightly toasted 1 Pre­pare the pies ac­cord­ing to in­struc­tions on the pack. 2 Melt 20g but­ter in a fry­ing pan over medium heat. Add ap­ple and cook, turn­ing, for 5 min­utes. Add maple syrup and shake pan to coat ap­ple. Sim­mer over low heat for 3-5 min­utes or un­til ap­ple is ten­der. 3 Ar­range the kale on a plate. Use a slot­ted spoon to re­move the ap­ple from the pan and add to the kale with the al­monds. 4 Add the re­main­ing but­ter to the pan with the pan juices. Stir over low heat un­til melted. Driz­zle the sauce over the salad and serve with the pies.
