EASY AS PIE
Creating a show-stopping dinner has never been so simple – just pair a delicious, slow-cooked Herbert Adams Gourmet Wine Infusions pie with a spruced-up salad, and ta-da!
SLOW-COOKED PIE WITH SMASHED PEAS & CHARGRILLED ZUCCHINI serves 2| prep & cooking 15 mins (+ cooking time for pies) 2 Herbert Adams Slow-cooked Beef with Caramelised Onion & Cabernet Sauvignon Pies 1 zucchini, thinly sliced lengthways 250g frozen peas 1 tbs extra virgin olive oil, plus extra, to serve 1 lemon, rind finely grated, juiced Small fresh mint leaves, to serve 1 Prepare pies according to instructions on the pack. 2 Heat a chargrill or barbecue over medium heat. Spray zucchini with olive oil and cook for 2-3 minutes each side or until charred and tender. Transfer to a plate and keep warm. 3 Meanwhile, cook peas in a saucepan of boiling water for 2 minutes. Drain. Mash lightly with olive oil and 1 tbs lemon juice. Season. 4 Arrange peas and zucchini on a plate. Top with lemon rind and mint leaves. Drizzle with oil and serve with pies.
SLOW-COOKED PIE WITH APPLE, KALE & ALMOND SALAD
serves 2 | prep & cooking 15 mins (+ cooking time for pies) 2 Herbert Adams Slow-cooked Beef with Shiraz & Cracked Pepper Pies 35g butter, chopped 1 large red apple, sliced into wedges 1 tbs maple syrup 50g baby French kale leaves 20g sliced almonds, lightly toasted 1 Prepare the pies according to instructions on the pack. 2 Melt 20g butter in a frying pan over medium heat. Add apple and cook, turning, for 5 minutes. Add maple syrup and shake pan to coat apple. Simmer over low heat for 3-5 minutes or until apple is tender. 3 Arrange the kale on a plate. Use a slotted spoon to remove the apple from the pan and add to the kale with the almonds. 4 Add the remaining butter to the pan with the pan juices. Stir over low heat until melted. Drizzle the sauce over the salad and serve with the pies.
