Mahalia Layzell has just invested in a larger, more sophisticated roasting machine to keep up with demand for her award-winning Mahalia Coffee from the Limestone Coast.
“The new technology is fabulous. For me it’s like going from a BMW 3 series to a 7 series!” Mahalia says. “I’m excited about where I can take my craft in the future now.”
The boutique company was founded in 1999 by Mahalia and her husband, Paul Layzell, and has grown in size and reputation.
Mahalia employs 13 people and supplies more than 200 outlets around Australia from its factory in Robe.
Mahalia coffee recently won four medals at the Royal Hobart Fine Food Awards. Blend No 4, Blend No 2 and Decaffeinated won silver while its Fair Trade Organic Ethiopian Harrar and Fair Trade Organic Sumatra won bronze.
Mahalia and Paul, both trained chefs, say they’re always striving to do better. “Coffee is a fast-paced industry. You must relentlessly improve your game otherwise the competition will run you over.” mahaliacoffee.com.au
