375g mac­a­roni

60g but­ter, chopped

¼ cup (35g) plain flour

3 cups (750ml) hot milk

1½ cups (180g) coarsely grated

ched­dar cheese 1 cup (70g) stale coarse white

bread­crumbs

1 Pre­heat oven to 180°C/160°C fan. Grease a 1.5-litre (6-cup) oven­proof dish.

2 Cook pasta in a large saucepan of boil­ing water for 8 min­utes or un­til ten­der; drain.

3 Mean­while, melt but­ter in a large saucepan. Add flour; cook, stir­ring, for 2 min­utes or un­til mix­ture bub­bles and thick­ens. Grad­u­ally stir in milk. Cook, stir­ring, for 3 min­utes or un­til sauce boils and thick­ens. Stir in 1 cup of the cheese.

4 Stir pasta into hot sauce mix­ture; spoon into dish. Sprin­kle with com­bined bread­crumbs and re­main­ing cheese. Bake, un­cov­ered, for 25 min­utes or un­til browned lightly.
