Socca, also known as far­i­nata, is a tra­di­tional Ital­ian and Provençal pancake made from chick­pea flour.


You’ll need an oven­proof fry­ing pan for this recipe.


Store socca in an air­tight con­tainer in the fridge for up to 3 days, or freeze for up to 1 month. Re­heat socca be­tween sheets of bak­ing pa­per in a sand­wich press.
