90g Euro­pean Halloumi Cheese 18 small un­cooked prawns (450g),

shelled, de­veined

2 tea­spoons rig­ani (greek oregano) 2 ta­ble­spoons olive oil

6 bay leaves, halved lemon cheeks and crusty bread,

to serve

1 Cut cheese into 12 bite−sized pieces. Com­bine cheese, prawns, rig­ani and oil in a shal­low bowl. Thread prawns, bay leaves and cheese al­ter­nately onto six small skew­ers; sea­son with pep­per.

2 Cook skew­ers on a heated grill plate (or grill or bar­be­cue or grill pan) over medium−high heat for 5 min­utes or un­til prawns are cooked through. Serve with lemon cheeks and bread.
