PREP + COOK TIME 20 MINUTES MAKES 6
90g European Halloumi Cheese 18 small uncooked prawns (450g),
2 teaspoons rigani (greek oregano) 2 tablespoons olive oil
6 bay leaves, halved lemon cheeks and crusty bread,
1 Cut cheese into 12 bite−sized pieces. Combine cheese, prawns, rigani and oil in a shallow bowl. Thread prawns, bay leaves and cheese alternately onto six small skewers; season with pepper.
2 Cook skewers on a heated grill plate (or grill or barbecue or grill pan) over medium−high heat for 5 minutes or until prawns are cooked through. Serve with lemon cheeks and bread.
