2 medium peaches (300g),

stones re­moved, quar­tered 2 medium ki­wifruit (170g),

peeled, halved

8 cos let­tuce leaves, washed

3 sprigs fresh mint

1 small lime (65g), peeled, quar­tered 2 le­banese cu­cum­bers (260g),

un­peeled, quar­tered length­ways mint leaves and peach wedges, ex­tra,

to serve

1 Push peach, ki­wifruit, let­tuce, mint, lime and cu­cum­ber through a juice ex­trac­tor into a jug.

(Make sure you add the let­tuce and mint to the juicer in the mid­dle of the or­der so the re­main­ing in­gre­di­ents help to push them through.) 2 Serve over crushed ice and topped with mint and peach wedges.
