48 oys­ters of choice, on the half shell

RED WINE VINE­GAR DRESS­ING 1 ta­ble­spoon chopped green onions 2 ta­ble­spoons red wine vine­gar 2 tea­spoons ex­tra vir­gin olive oil

SPICY LIME DRESS­ING 2 ta­ble­spoons lime juice 2 ta­ble­spoons ja­panese soy sauce 1 tea­spoon white sugar

1 fresh small red thai chilli,

chopped finely

1 Make red wine vine­gar dress­ing. 2 Make spicy lime dress­ing.

3 Just be­fore serv­ing, driz­zle half the oys­ters with red wine vine­gar dress­ing and the re­main­ing oys­ters with spicy lime dress­ing.
