Stir 1.25 litres (5 cups) co­conut wa­ter, 2/3 cup caster sugar and 1 cup white rum in a large jug un­til sugar dis­solves. Squeeze the juice from 2 quar­tered limes into jug, then add the limes. Add 3 trimmed le­mon grass stalks, halved length­ways; stir, then top with

4 cups crushed ice.
