PREP TIME 10 MINUTES MAKES 1 CUP (250ML)
Blend or process 3 coarsely chopped fresh long green chillies, 2cm piece chopped fresh ginger, 2 coarsely chopped fresh small red thai chillies, 2 cloves garlic, 1 quartered shallot, ⅓ cup lime juice, 2 tablespoons fish sauce, 1 tablespoon grated palm sugar and 1 tablespoon peanut oil until smooth; stir in ¼ cup finely chopped roasted unsalted cashews. Season to taste.
SERVING SUGGESTION Nam jim is used as a dipping sauce for Thai food or served with grilled meat, poultry or fish. It can also be used as a salad dressing.
