Blend or process 3 coarsely chopped fresh long green chill­ies, 2cm piece chopped fresh gin­ger, 2 coarsely chopped fresh small red thai chill­ies, 2 cloves gar­lic, 1 quar­tered shal­lot, ⅓ cup lime juice, 2 ta­ble­spoons fish sauce, 1 ta­ble­spoon grated palm sugar and 1 ta­ble­spoon peanut oil un­til smooth; stir in ¼ cup finely chopped roasted un­salted cashews. Sea­son to taste.

SERV­ING SUG­GES­TION Nam jim is used as a dip­ping sauce for Thai food or served with grilled meat, poul­try or fish. It can also be used as a salad dress­ing.
