Apricot chicken was a 1970s classic.
The tantalising ingredients included thousand island dressing and french onion soup mix. In the US, some recipes even used
“mock chicken legs” – ground pork and veal, pineapple and spices shaped around skewers to look like chicken legs! In Australia, we were even groovier – we used a can of apricot nectar instead of jam.
