It’s important to use fresh ricotta from the deli, not the smooth ricotta sold in tubs, or the “meatballs” will be too soft.

Traditiona­lly, parmesan is made with calf rennet. When purchasing, check the ingredient­s to ensure it’s vegetarian and doesn’t contain rennet.
