To sweeten these treats, we’ve used natural sweeteners, such as fresh fruit like dates and strawberries, raw honey, pure maple syrup and rice malt syrup. Pure floral honey, unlike blended honey, has a low GI. Pure maple syrup, the concentrated sap of the maple tree, also has a low GI, so is a good choice to avoid high blood glucose spikes. Rice malt syrup is made by cooking brown rice flour with enzymes to break down the starch into sugar. It’s fructose-free and a popular vegan alternative to honey.
