To sweeten these treats, we’ve used natural sweeteners, such as fresh fruit like dates and strawberri­es, raw honey, pure maple syrup and rice malt syrup. Pure floral honey, unlike blended honey, has a low GI. Pure maple syrup, the concentrat­ed sap of the maple tree, also has a low GI, so is a good choice to avoid high blood glucose spikes. Rice malt syrup is made by cooking brown rice flour with enzymes to break down the starch into sugar. It’s fructose-free and a popular vegan alternativ­e to honey.
