LAZY KALE TOR­TILLA

Pre­heat oven to 200°C/180°C fan. Pulse 3 cups kale leaves in a food pro­ces­sor un­til coarsely chopped; trans­fer to a large bowl. Re­peat with 1 cup each flat-leaf pars­ley leaves and dill sprigs and 3 green onions; trans­fer to bowl. Add 9 eggs and 2 slices torn whole­meal bread; mix to com­bine. Sea­son.

Heat a 26cm oven­proof fry­ing pan over medium heat. When pan is hot, add 2 ta­ble­spoons olive oil, then egg mix­ture; cook for 8 min­utes or un­til tor­tilla is three-quar­ters set. Trans­fer to oven; cook for a fur­ther 15 min­utes or un­til set. Serve tor­tilla driz­zled with olive oil, ex­tra pars­ley and lemon wedges.
