LAZY KALE TORTILLA
PREP + COOK TIME 30 MINUTES SERVES 4
Preheat oven to 200°C/180°C fan. Pulse 3 cups kale leaves in a food processor until coarsely chopped; transfer to a large bowl. Repeat with 1 cup each flat-leaf parsley leaves and dill sprigs and 3 green onions; transfer to bowl. Add 9 eggs and 2 slices torn wholemeal bread; mix to combine. Season.
Heat a 26cm ovenproof frying pan over medium heat. When pan is hot, add 2 tablespoons olive oil, then egg mixture; cook for 8 minutes or until tortilla is three-quarters set. Transfer to oven; cook for a further 15 minutes or until set. Serve tortilla drizzled with olive oil, extra parsley and lemon wedges.
